This type of mold produces aflatoxin, which is a carcinogen. Therefore, many people have been switching to eating Valencia peanuts or Valencia peanut butter.

Valencia peanuts look the same on the outside as the others with a semi-porous shell, but the actually kernels are smaller and each peanut can contain 3-4 of them.

They are the sweetest of all the peanuts, covered in a red skin, and grow in places with dry climates such as New Mexico. They are most often used in all-natural peanut butter, or boiled for a tasty snack.
